Boy, this weekend sure was a whirlwind of goodness … followed by that feeling of being overwhelmed, yet again!
Just a quick note… my camera is seriously injured (Nikon, D40) AND I’m honestly disliking life without it, very much. Ugh! Besides, that minor bump in the road we (my mother, sis, neice and I) celebrated Mother’s Day by attending a tea with my Grandmother and 2 Aunts down in Pasadena at the Rose Tree Cottage. It turned out to be a lovely afternoon.
Mother’s Day was wonderful and quiet and filled with plenty of LOVE.
We’ve been battling the sniffles… which is why I was a little late posting the winner for The SoftLanding giveaway. Thank you for your patience.

CSA action on Saturday was awesome… starting to see tomatoes come in. Big juicy ones. Other than that, mostly the same as the prior week. Tarragon was this weeks herb. Can’t tell you how much I love being part of a CSA. I highly recommend it. I’m proud to be a member and I think it’s a great way to get more fresh foods into your diet and it will certainly help with getting back to basics in the kitchen!
Tyler (my hubby) brought home a bucket of lemons last week and we’ve been enjoying them quite a few different ways.
Lemonade is the most popular thing to do with lemons but in my family traditionally what we like to do is make a quick cucumber salad.
Really simple… makes a a great snack or salad along with dinner.
1 whole cucumber peeled and cut into 1/4 inch rounds
a couple sprinklings of salt
juice of 2 lemons
Add all ingredients into a bowl and serve.
Up until recently, I’d eat it plain just as mentioned…until last week when I added in some cilantro and boy what a difference. Dill would also be really good here too.If you want a spicy version you can toss in some red pepper flakes or a few dashes of Tabasco sauce.

Then today, as I was going through our pantry stash… I found hazelnuts of all things…I was THRILLED.
Ever since I saw an article, in the LA Times, on how to make your own nutella; I’ve wanted to try it out (I think I bought the nuts shortly after and forgot about them). Today, I decided to keep it simple and make hazelnut butter instead of Nutella since I didn’t have all the required ingredients to make Nutella. I definitely would like to make it someday though because I do enjoy a little Nutella on toast every now and then. Mmmm!
Can you imagine some homemade Nutella on homemade graham crackers. OOooh, bliss!
We enjoyed the nut butter with apples and celery!
HAZELNUT BUTTER
1 1/2 cups hazelnuts added to your food processor… blend baby blend… until smooth and creamy!
easy peasy!
I really enjoy making things from “scratch” it just add so much more personality to the food, especially when using ingredients that are fresh from your garden.
Okay, it’s midnight and I just checked my updates and found a yummy recipe I plan to try soon….
I’m finding lots of great meatless monday recipes these days… I LOVE IT.

Sprouted Wild Rice with Corn and Tomato
Last, Thanksgiving, I actually made a sprouted wild rice salad but it contained cucumber, parsley, and tomato. It was yummy and since then I’ve forgotten how easy of a meal this can be!
Excited to try this out!
