Happy Meatless Monday!
Hope you all had a marvy weekend. Most of our weekend was spent in the garden/outdoors.
I’m more exhausted from the heat though… ugh!
Anywho… I’ve got a “big ole” pot of chickpeas, waiting to be turned into something delightful for Meatless Monday.
Lot’s of great ideas too!
Besides, making hippie hummus, I’d like to make a flavorful chickpea dish for tonight’s meal and I’m being a little indecisive.

Now, if only I could choose which one to make… they all sound really good. I need your help on this one, k?!!?

This is one of my favorite vegetarian recipies. Couscous Salad with Roasted Vegetables and Chickpeas. http://www.marthastewart.com/recipe/couscous-salad-with-roasted-vegetables-and-chickpeas
I’ve used both regular whole wheat couscous and Israeli couscous. Both are good. Unfortunately, it does require turning on your oven, but you could probably grill the veggies to avoid heating the house in the summer.
I’ve taken this to baby showers. It looks beautiful on a platter and everyone loves it, both veggies and non-veggies.
